Rice Vinegar Nio-su (Nakahashi Zosu llc.)
Rice vinegar made the same way since 1741.
Nio is home to a vinegar brewery run by Nakahashi Zosu llc., that has been creating Nio-su rice vinegar since 1741. Vinegar production in Kagawa dates back about 280 years to the mid-Edo period, and it's said that it started with Tanoya Nakahashi Niemon's production of rice vinegar in Nio. This history is carried on by Nakatsu Zosu, using the same traditional techniques to continue producing vinegar in the same location.
Using a traditional production method utilized for over 280 years, the (soon-to-be) vinegar is fermented in cypress barrels, which results in an acidic yet mellow vinegar.
The result has a smooth, mellow flavor that works well with any recipe.
They also sell a line of fruit-flavored vinegar, called Fruits DE Su. Made with locally-grown mandarin oranges, grapes, boysenberries, and more, these vinegars are perfect in vinaigrettes or drizzled over yogurt. Add nuance and flavor to everyday cooking with ease.
Nio-su Vinegar is also available for purchase at Hyakusai Syoten by Chichibugahama Beach.
