Bean to Bar Chocolate
Mitoyo's own tiny chocolatier: Racati. The entire chocolate-making process is contained in this modest building, from the selection of the beans, to the roasting and final production of the bars. Even through to packaging of the finished bars, the staff puts their heart into doing every step of the process by hand.
Racati was created because a local company that manufactures building materials wanted to spread the Power of chocolate.
Not only does is Racati's chocolate made from cacao beans from around the world, but it combines those beans with wasanbon, a traditional Japanese type of sugar that has been made in Kagawa for hundreds of years.
